I wouldn't trade your 1st and 2nd round picks for an upgrade at TE. Julius is great, but Forte/Bryant are both capital-S STUDS with huge roles on their respective teams. Cobb isn't the best receiver on his own team, and Murray's injury history makes the jump from Forte very risky.

Olsen is a fine TE. If you really want an upgrade at TE, I would narrow the trade down so that it doesn't involve 4 players on your side including your best two. Alternatively, grab or trade for (at a much lower cost) one of the many TEs who may potentially breakout this year. I'm thinking of players like Ladarius Green, Zach Ertz, or Dennis Pitta. Chances are one of them isn't starting.

You've already got a top 5 RB in Forte, and a top 5 WR in Bryant. Olsen isn't a top 10 TE, but he is much closer to Thomas in terms of value than the Cobb-Murray combo is to the Bryant-Forte combo. Plus, I wouldn't want to take on Amendola (for the reasons stated in the other comments. Olsen actually could be a solid TE and might be more productive than normal. He is the only receiver on his team that has caught a pass from Cam Newton in a regular season game prior to the start of this season. He could end up being Cam's go-to target the way Witten has been for Romo in Dallas.
