Should I settle on 1 TE or keep playing the waiver wire?

10 team, non-ppr. Currently have Olsen. Guys like D Clark (who has been coming on nice and has a nice schedule in playoffs), M Bennet (who I played in the beginning of the year), M Lewis and B Pettigrew are available. Thoughts?

If you were going to trade out Olsen for someone, it should be Pettigrew or Bennett. However, I don't think either represents a significant upgrade from Olsen.

This is why I use a TE/WR flex in my league. The TE position is just too variable unless you own Gronk (when healthy) or Jimmy Graham. I'd keep playing the matchups as long as you have the guys you say are available on waivers each week.

Yeah, that's the problem once you get past the top-6 TE's - from there on out any of those guys is capable of getting you 7x75 yards and two TD's just as much as they can get you 1x15 yards and no TD's.
