I'd go with Ryan Mathews for sure. With Woodhead out for the year, once Mathews is back he'll get way more carries than before (maybe even some red zone ones). I'd probably drop Paul to get Mathews (you can always grab another backup TE if Vernon Davis is out for a while), though you might be ready to give up on Torrey Smith by now.
