Questions
Who should I cut?
PPR League

So really only have room on my roster for 1 TE and I currently have Martellus Bennett (who is at his upside a streamer) and Travis Kelce (who is a far riskier prospect, but has more upside). Bennett is clearly the safer candidate, but Kelce has far more upside. Am I just trying to be too smart by wanting to keep Kelce, or is that a REASONABLE decision.

If you only have roster spae for 1 TE, then I think you should stay with Bennett. (And not just because he and I share the same name.) Trestman;s system in Chicago will push the football downfield. Lots of opportunities. Marty B is a proven commodity. While Kelce is still a rookie. Even if KC decides to make him starter TODAY, its still a run based offense and he wil still have to deal with the adjustments of playing in the NFL. Rookie TEs dont often make significant splashes.

If you're looking to stream, then stream away and I like Bennett more early even in spite of the tough week one matchup. I'd say keep Kelce in mind for a few weeks and if you think he's headed for his ceiling, pick him up a bit earlier than the matchups would suggest.

I'm happy to stream, but I guess my point is that Kelce has potential to be more than a streamer. He's pretty well hyped now so I'm concerned that if I cut him someone else will snatch him up.

Then go with your gut. Whichever has a good game is going to make the other look bad, and to be fair--the Chiefs don't have a lot of other downfield options. If you're concerned about other people grabbing and holding Kelce, then ride him for a few weeks and see how it goes.

Why are you looking to cut?
Keep Bennett from the 2. Kelce will be out on the wire for a bit so I don't see your risk. You can pick him up next week I'm sure unless you have a super deep league.
